Roasted Brussels Sprouts and
Quinoa Salad

Ingredients:
Brussels sprouts (about 2 cups), thinly sliced 1 cup cooked quinoa
1 cup cury kale, chopped and stems removed S
1 avocado, cut in 1 cm cubes
1 tbsp raw honey |
a Jumoa Salad
1 tbsp olive oil
Salt and pepper to taste
1/4 cup pomegranate seeds
1/4 cup pecan nuts slightly roasted
Fresh mint for garnish, finely chopped

For BALSAMIC VINAIGRETTE:
½ lemon juiced ted Brussels Sprouts
1 tbsp balsamic vinegar
1 tbsp olive oil allu uinoa Salad
1 tbsp Dijon mustard

Instructions:
Preheat the oven to 400°F (200°C).
In a bowl, toss the sliced Brussels sprouts with 1 tbsp olive oil and honey. Mix well Spread them on a lined baking sheet. Roast for 20-25 minutes, until they are caramelized and golden brown, stirring halfway through for even roasting.
While the sprouts are roasting, cook the quinoa according to package instructions (about 15 minutes). Let it cool slightly. Add quinoa on another baking tray and add to oven for around 15 minutes, so it will become crispy.
Place the chopped kale in a large salad bowl. Add Brussels sprouts, quinoa and avocado and mix welا, Transfer mixed salad to a serving bowl.

Prepare balsamic vinaigrette, by combining all ingredients to a small jar and shake well.
Top up salad with roasted pecan nuts, pomegranate seeds, chopped mint and Balsamic vinaigrette!

As you guys know, I usually make my own turmeric and ginger shots but life have been soooo busy lately! So happy for @theturmericco shots 🫶

TOMATO AND PEPPER SOUP

• 2 small onion onions, halved
• 2 heads of garlic, slice in half
• 1 red pepper, halved
• 5 ripe tomatoes, halved
• 500ml organic chicken stock (or more for thinner consistency)
• handful of basil
• 500 ml Creamed coconut
•. 1 can of butter beans, drained and rinsed
• Sea salt and black pepper, to taste
• Optional garnish: fresh basil or chilli flakes for garnish

1. Preheat the oven:
Heat to 200°C
2. Prepare the veg:
Place tomatoes (cut side up), peppers, onion, and garlic cloves on a large baking tray. Drizzle with olive oil, sprinkle with salt, pepper and herbs
3. Roast:
Roast for 30–35 minutes, until everything is softened and slightly caramelised at the edges. The tomatoes should look juicy and blistered.
4. Blend:
Squeeze the roasted garlic out of its skin and add it (along with all roasted vegetables and their juices) to a blender or food processor. Pour in the vegetable stock and balsamic creamed coconut. Add handful of fresh basil and blend until smooth.
5. Adjust:
Pour the blended soup into a pot, warm gently, and taste — add more salt, pepper, or vinegar if needed.

MANGO COCONUT CURRY

INGREDIENTS:

1 tablespoon coconut oil (or ghee) I use @lucybeecoconut
1 onion, diced
2 garlic cloves, finely chopped
1/2 inch ginger, peeled and finely chopped
1 tsp coriander powder
1 teaspoon ground turmeric
1 teaspoon chilli powder
200 ml coconut milk
1 organic vegetable stock cube (dissolved in 150 ml water)
400 g tin of chickpeas, drained and rinsed
1 carrot, peeled and grated
1 ripe but firm mango, peeled and diced
50 g cashew nuts
Salt, to taste
100 g organic spinach

To serve:
Cooked brown rice, white rice or quinoa
Red Chilli
Coriander
Greek yogurt

Instructions:

Heat up the oil in a large pan and add the onion. Cook for 6 minutes. Add garlic and ginger, cook for another 4 minutes.
Add all spices for about a minute until fragrant.
Add the coconut milk, vegetable stock, chickpeas, carrot, mango, cashew nuts and salt, with enough water to roughly cover
Bring to the boil and simmer on a low heat for around 10 minutes
Add the spinach and simmer for another few minutes.
Serve in a bowl, top up with red chilli, Greek yogurt and coriander

Ingredients:

1/2 pumpkin, cut in small pieces
1/2 cup peanut butter (smooth or crunchy)
1/3 cup cacao powder
1/2 cup coconut flour
1 tsp cinnamon
1 tsp raw honey
Pecan nuts for toppings
Instructions:

Preheat oven to 350°F (175°C). Line a baking dish (8x8 inch) with parchment paper. Add pumpkin and bake for 20 min. remove skin and add to a blender. Blend until smooth.
In a large bowl, mix together the all ingredients. Including pecan nuts for topping.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
Let the brownies cool completely before slicing and serving. You can drizzle with extra peanut butter or sprinkle with a little sea salt for added flavour

Ingredients (Serves 2)

2 medium sweet potatoes
1 can (400g) chickpeas, drained and rinsed
1 tsp sea salt
1 tsp chili flakes (per taste)
1 tsp ground cumin
1/2 tsp ground turmeric
1 avocado
½ red onion, diced
1 tomato, chopped
½ lemon, juiced
Herb dressing:

1/2 cup Greek yogurt (plain, full-fat for best flavor)
1 small garlic clove, finely grated or minced
2 tbsp fresh parsley, finely chopped
1 tbsp lemon juice (or more to taste)
1–2 tsp olive oil

Instructions

Preheat oven to 200°C
Wash and scrub sweet potatoes. Prick a few times with a fork.
Add drained chickpeas to a bowl and add spices – chili flakes, salt, turmeric and ground cumin, mix well.
Place on a baking tray and roast for 50 minutes or until tender.
Prepare mash avocado toping – mash avocados, add onions, tomatoes, lemon juice and mix well.
Prepare your dressing – add all Herb dressing ingredients to a blender and blend till smooth.
Once potatoes and chickpeas are cooked start assembling – fluff inside of sweet potato lightly, add avocado mix, chickpeas and dressing and top it with some more herbs.

🎃 Pumpkin spice energy bites! These little bites of fall are perfect for fueling up on flavor and energy. 🍂

Recipe:

1 cup organic peanut butter

½ medium size pumkin

2 tbsp cinnamon

3 tbsp coconut flour

2 tbsp cacao powder (raw)

50 g melted dark chocolate

Directions:

Preheat the oven to 180°C (350°F). Cut the pumpkin into small 1 cm cubes and place them on a baking tray. Sprinkle with cinnamon and bake for 20 minutes, or until tender.
Transfer the baked pumpkin to a blender and blend until smooth to form a paste.
In a large bowl, combine the pumpkin paste with the rest of the ingredients and mix well. If the mixture is too wet, add a bit more coconut flour until you reach the right consistency. Refrigerate for 20 minutes to firm up the dough.
Roll the dough into balls. Dip some or all of them in melted dark chocolate, if desired, and place them in the fridge to set.

NOURISH BOWL THAT YOU WILL LOVE 😍😍😅

If someone tells you that eating healthy is boring ask them to make this 😜

Sundried tomatoes hummus:
1/2 can chickpeas
2 tbsp Greek yogurt
3 slices of sundried tomatoes
1 clove of garlic
Dash of lemon juice

Other ingredients:
2 carrots, sliced
50 g parmesan, grated
3 leaves Cavolo Nero Kale
9 plum tomatoes, sliced
1/4 onion chopped
1/2 can brown lentils

Yogurt dressing:
3 tbsp Greek yogurt
1 tbsp French mustard
1/2 lemon, juiced
1 clove of garlic, minced
2 tbsp olive oil

Process:
1. Slice carrots and boil them in hot water till soft, around 10 min. Transfer to a baking tray and squeeze them as on video with a glass. Top it with grated Parmesan cheese and over bake it for 10 min.
2. Brown lentils - wash it, transfer to a baking tray and add salt and pepper and over bake it for 30 min or till it’s crunchy!
3. Add all ingredients for hummus into a blender and blend till it’s smooth
4. Add tomatoes, chopped onion and some olive oil in a bowl and mix it
5. Start by making hummus bed on a plate. Top it with kale, tomato salad, baked carrots and dressing!

1 medium carrot, top sliced off
1/2 pepper, halved and deseeded
3 radishes
3 spring onions
1cm piece of ginger, finely grated
1 tbsp miso
1 tbsp soy sauce
1 tbsp peanut butter
2 tbsp kimchi, plus 1 tbsp brine
1 portion glass noodles
2 boiled eggs, halved

Top-ups
Crunchy chilli onion

Method
1. ��Thinly slice the carrot, pepper, radishes and spring onions.
2. ��Spoon the ginger, miso, soy sauce, kimchi and its brine into a 500ml preserving jar or lidded plastic container.
3. Add noodles and pour over hot water
4. Top with boiled eggs and onion crunch

Preparation time: 10 minutes
Soaking time: 5 minutes

- In a bowl start with a bed of kale & spinach and add all other ingredients on top and finish with dressing

Pickled red onions is so good! You can use it for food prep, also if you don’t like the strong taste/smell of fresh onion it removes it as well and mainly it enhances flavour of any dish you will add it on! Oh, and of course pickled stuff is really healthy!

Recipe:
For brine:
1 cup white wine vinegar
1cup Water
2 Bay leaves
2tsp Peppercorns
2T Sugar
2tsp Salt
3 Garlic cloves

- Slice 4-5 red onions
- Separate them and add to a jar
- In sauce pan bring water and white wine ginger and all other ingredients to boil
- Pour it immediately over onions

Kelp it in a fridge for up to one week!

As a holistic health coach, I’ve seen firsthand how slowing down your mornings can completely shift your energy, mindset, and even your physical health. This isn’t about creating a rigid 2-hour ritual. It’s about reconnecting with yourself before the world gets loud.

When you wake up and immediately check your phone, skip breakfast, or run out the door, your body enters a stress response — also known as “fight-or-flight.” Your cortisol levels rise, your digestion slows, and your nervous system becomes overstimulated before you’ve even had a chance to breathe.

HEALTHY ICE CREAM 🔥🔥🔥

1 banana
2 tbsp yogurt
2 tbsp peanut butter
1 tsp maple syrup
100g dark chocolate
Chopped peanuts to sprinkle on top

Add banana, peanut butter, yogurt and maple syrup to a blender and blend till smooth. Add mixture to ice cream mould. Fill it till half first and top with peanut butter and add remaining. Freeze for one hour and dip in melted dark chocolate. Sprinkle some chopped hazelnut on top

Bottom layer:
Cottage cheese 3 tbsp
4 dates
Peanut butter 1 tbsp

Top layer:
6 dates
Almond milk (splash)
Chopped hazelnuts

Cover:
Dark chocolate (melted)

- add cottage cheese, peanut butter and dates and blend it well.
- Add it to cupcakes tray and freeze it till you prepare other part
- Add dates and almond milk to a blender and blend till you have caramel like consistency
- Add chopped hazelnuts
- Remove tray from freezer and top it with blended caramel
- Freeze it for at least half an hour
- Dip it to melted chocolate and enjoy
- It’s amazing frozen - tastes like snickers ice cream, or you can keep it in the fridge

Ingredients:
200g canned chickpeas
1 large sweet potato
2 sweet small sweet pepper, sliced
1 cup of cherry tomatoes, halved

1 tbsp pine nuts
1 tbsp mixed herbs
1 tbsp red chilli flakes

Fresh basil pesto ingredients (just combine all ingredients and blend)

Salmon, Spinach & Egg Breakfast Muffins (6 muffins)

Ingredients:

6 eggs
120 g salmon, cubed
1yellow bell pepper, finely diced
1 large handful fresh spinach (roughly 30g), chopped
1 tbsp olive oil (optional for richness)
Salt and pepper to taste
Optional: pinch of smoked paprika or fresh dill for extra flavor
Instructions:

Preheat oven to 180°C (350°F) and lightly grease a 6-hole muffin tray.
In a bowl, whisk the eggs with milk, salt, pepper, and any optional spices.
Add salmon, diced pepper, chopped spinach to a muffin tray.
Pour the mixture evenly into 6 muffin cups
Bake for 18-22 minutes, until muffins are puffed and set in the center.
Let cool slightly before removing from the tray. Enjoy warm or store in the fridge for up to 3 days.

Glutten free, rich in PROTEIN & FIBRE LENTIL BREAD

Ingredients:
- 200g red lentils (soaked in water for 2h or overnight)
- 2 eggs
- 2 tablespoons Greek yoghurt
- 7-8 sun-dried tomatoes, chopped
- 1 tablespoon extra virgin olive oil
- 4 tbsp mixed seeds
- 1 tbsp chia seeds
- 1/2 tsp salt & pepper
- 1 tsp baking powder

Instructions:
1. Preheat your oven to 180°C
2. Add the soaked lentils, eggs and yoghurt to a blender. Blend until smooth.
3. Transfer the mixture to a large bowl. Add in the rest of the ingredients and mix well.

TOMATO AND AVOCADO SALAD

Ingredients:
1 cup of cherry tomatoes, halved
1 ripe avocado, diced
3 cucumber, sliced
1 medium red onion, diced
125 g fresh mozzarella cheese balls
1 tbsp pine nuts

Fresh basil pesto ingredients (just combine all ingredients and blend)
- bunch of fresh basil leaves
- 1/3 cup of pine nuts
- 1/3 cup grated Parmesan cheese
- 2 small garlic clove, pealed
- Pinch of sea salt
- 1/3 cup extra virgin olive oil
- 1 lemon, juiced

INGREDIENTS

For the Sushi Cups:

1 piece salmon fillet (around 100g) the skin removed and cubed
1 Pinch Sea Salt
2 Tablespoons Soy Sauce
1 tbsp honey
1 tbsp sesame oil
2 homemade shriracha mayo (just mix shriracha sauce with Greek yogurt)
1 ½ Cups Rice
3 sheets Nori seeweed, cut in half

For the Garnishes:
Sesame seeds
Spring onion, chopped

INSTRUCTIONS
1. Start by preheating your oven to 200 degrees.

2. Next, add your cubed salmon, sea salt, soy sauce,sesame oil in a bowl. Toss to coat well, until all of the ingredients are fully combined.
3. Prepare your nori sheets by laying them out on a countertop. If using large nori sheets, cut them into squares small enough to fit into each cavity of your muffin tin.
4. Add about 2 tablespoons of your rice to each nori sheet, then fold and place inside the muffin tin. Repeat until all of the cavities of your muffin tin are filled.
5. Then, top each nori cup with your salmon mixture. This will be about 2 tablespoons, depending on how big your salmon is!
6. Finally, bake your cups for 15 minutes, or until the salmon is cooked to your liking.
Once done, remove from the oven, top with your garnishes of choice, serve, and enjoy!

Inspired by traditional Korean and Japanese cucumber salads - you are going to love this, I promise! 🫶

4 cucumbers, sliced
1/2 teaspoon of salt
2 tbsp white wine vinegar
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp lemon juice
1/2 tsp red chilli flakes
1/2 tbsp sesame seeds

Wash and dry cucumbers. Place cucumber between 2 chopsticks (or straws)
Cut one side at a 45-degree angle.
Flip the cucumber over and cut at a straight/90-degree angle.

Add all ingredients above and mix well!

Ingredients:
* 300 g cottage cheese
* 100 g natural yogurt
* 10 g gelatin + 100 ml water
* Stevia or another sweetener
* Strawberries
* 150 g dark chocolate
* 1 teaspoon coconut oil
Instructions:
1. Mix the gelatin with water and dissolve it over low heat.
2. Melt the chocolate together with the coconut oil.
3. Brush silicone muffin molds with the melted chocolate and place them in the refrigerator to set.
4. Place one strawberry in each mold.
5. Blend the cottage cheese, yogurt, gelatin, and stevia until smooth.
6. Pour the mixture over the chocolate layer in the molds.
7. Place in the refrigerator to set.
8. Once set, spread a layer of chocolate on top of the filling and return to the refrigerator until fully firm.

- handful of chopped mixed nuts
- drizzle with lemon juice, olive oil and salt & pepper
